This sparkler is a curious blend of Merlot and Incrocio Manzoni 13.0.25. Incrocio Manzoni is a hybrid grape of Raboso and Moscato d’Amburgo and was created in the 1930s by Professor Manzoni of the School of Enology at Conegliano. He wrote of the grape, “it might make one laugh to think of a hybrid of these two grapes. However, I thought that the rustic Raboso could actually be enhanced by the elegant, and productive, Moscato d’Amburgo.” I’ll say that he was right. This grape gives a fresh elegance and balance to the wine.
The grapes undergo a brief maceration to give the rosè colour.

VARIETALS: 70% Merlot, 30% Incrocio Manzoni 13.0.25.
TRELLISING: Double-arched cane.
HARVEST TIME: September.
RESIDUAL SUGAR: 15 g/l.
TOTAL ACIDITY: 6.1 g/l.
TOTAL SULFUR: 105 mg/l.
COLOR: Brilliant pink with orangish hues.
PERLAGE: Fine and persistant.
AROMAS: Strawberry, plums, raspberries; violets; sage and red pepper.
TASTE: Harmonious in its balance of sweet strawberry, fresh acid, and savoury herbal tones.
SERVING SUGGESTIONS: Braised beef with cherries, chantilly and strawberries. Fresh cheeses.
